Xe Lữa

It's a little known fact that phở can be ordered with any combination of meat you like, not just the ones listed on the menu. My favorite, phở tái chín (oxtail noodle soup with rare beef and well done brisket) is never listed but it's what we always order. For kicks we sometimes get it with bò viên (meatballs). Today's was heavy on the meat, light on noodles, but still reasonably tasty.
