4:00pm ginger cookie

Now normally, if you had asked me, I would say I love my ginger cookies with a bit of crisp and crunch. Until I was reminded of the deliciousness of the gingerbread cookie from Olive's that is. Slightly yielding texture, bits of spiciness and a not too sweet smattering of sugar crystals.
