The first thing M. and I do when we walk in a restaurant is not check out the other diners, but check out what they're eating. Today we noticed no less than three tables with the pan fried noodles. I have a soft spot for this dish, my mom used to make it all the time. There is something I love about the texture of crunchy noodles and a gravy sauce. Shanghai Cafe makes a decent one, nothing particularly special though. Maybe everyone else has a soft spot for crunchy noodles too?

Yes! My elementary/middle school cafeteria (back in Hong Kong) used to serve this - it was my favorite dish.
