Fried rice is one of those things I make when I'm too lazy to really cook but feeling like something homemade and not take-out. I chop up whatever leftover bits are lingering in the fridge and throw it all together with old rice and a beaten egg. That's instant comfort. When we order fried rice from Nyonya it means we're working late and need something familiar and sustaining to carry us through the rest of the night. In this case I just happened to have the right amount of leftover Nyonya young chow fried rice in my fridge for lunch the next day.
