My mom used to make cream puffs frequently enough that we all have a memory of dad in the kitchen, a pretty rare occurrence, vigorously beating the batter until it acquired the necessary sheen. If I had taken into account the weather today, I would have never made cream puffs for the last round of the Harvest bake-off but I was way too lazy to think of something else. Cream puffs I can make practically from memory, it's the vanilla custard filling that is the trickier part.
