In brief: Canelés are one of my favorite desserts hands down. I'm not sure what Y has against them. But when she's away, that's what I want.

Petrossian's canelé is almost too crunchy on the outside, but is redeemed by the ultimate chew on the inside. Nice eggy-ness too. I'm a happy camper.
