In brief: Normally a paragon of efficiency and reliable food choices, service was a little slow today.

Republic came onto the scene when we had just moved to NY. It was popular from the start, though we never understood why. It's still too loud and the food is nothing too special. But now that the 15 year mark has passed, we have to consider it a classic, or so we tried to convince Hong. Even if you're not a fan, Republic does manage to offer an incredible consistency of taste and speed, which has its merits. Naturally it would be today, with Hong, that the service lagged far behind it's usual speed.
